Contrary to current trends and conventions, our father never deviated from the traditional aging process in large wooden barrels. This allows us to rely on a well-maintained barrel cellar where our wines undergo spontaneous fermentation in complete tranquility. Our Rieslings and Burgundies are allowed to mature on the lees in large and small wooden barrels until well into spring, before finally being bottled. The combination of new influences with classic methods creates timeless, complex, and long-lasting wines.
